- heat salmon for 10 minutes in the oven, rest for 5 minutes
- heat couscous, fennel and pumpkin in a pan until warmed through (this can be done in a microwave if preferred)
- place couscous on plate, arrange salmon on top, spoon rocket and tomato salsa verde over the salmon
